Taco Pizza

Chef: Mike Parrish - Colored Bean Plant - Pigeon, MI

1 cup CO-OP ELEVATOR® dry Black Beans
Boil, cooked until tender, drained and mashed.
½ lb. ground beef
4 Tbs. butter
1 pkg. taco seasoning mix
1 small onion chopped
1 small green pepper chopped
1 small tomato – chopped
2 cups shredded Mozzarella Cheese
1 cup Cheddar cheese
Black olives (chopped or sliced)
Jalapeno Peppers (to taste)
¼ cup Italian dressing
Prepared Pizza Crust

Preheat oven to 400 degrees. Melt 4 Tbs. butter in frying pan , add mashed blacked beans. On medium heat cook for 10 minutes or until lightly browned. Set aside. Sautee’ onions, green peppers in Italian dressing until soft; add ground beef and cook until browned. Add taco seasoning mix as directed on package. Simmer and reduce until thickened.  Prepare pizza crust as directed. Layer mashed bean mixture, taco/salsa mixture, cheese, olives, peppers and tomato. Bake for 15-20 minutes or until crust golden brown. Serve with sour cream.
