Slow Cooker Italian Sausage Soup

1 lb. Italian or hot sausage
4 cloves garlic, minced.
1 medium onion
2 - 28 oz. cans beef broth
1 - 28 oz. can Italian – style stew tomatoes
2 cups diced red potatoes w/skins
1-½ cup CO-OP ELEVATOR® dry Small Red Kidney Beans
16 oz. water
8 oz. noodles of choice
1 Tsp. Italian Seasoning
Salt and pepper to taste
French Bread (Optional)

In a pan brown sausage with garlic and onion for 5 to 7 minutes. Move to slow cooker and add broth, tomatoes, beans, and seasoning. Set slow cooker for low heat, cover and cook 3 hours.

Add red potatoes to crock pot, salt and pepper to taste.

30 minutes before the end add al dente noodles to cook the rest of the way. Pull out sausage and cut into slices and return to crock pot.  Serve with French bread.
