Red Bean and Nachos

1 cup CO-OP ELEVATOR® dry Small Red Kidney Beans
½  lb. hamburger
1 pkg. taco seasoning mix
½ med onion finely chopped
1 – 12.5 oz. bag of Nacho cheese flavored Doritos
1 cup shredded Cheddar Cheese

Soak beans in 4 cups of water for 8 hours or longer. Drain water and add fresh water to beans and bring to boil. Reduce heat and simmer for 2 hours. Stir occasionally.  When beans are tender they are done cooking.  Strain water from beans, and mash the beans in to a chucky consistency. In another frying pan brown the ground beef. Rinse and drain. Stir the dry taco seasoning mix in 2 cups of water. Combine in a large frying pan the mashed red beans, the browned beef, the onion and the 2 cups of taco seasoned water.

Simmer for 10 minute to cook and let thicken.

Cover a large baking sheet with a layer of Doritos. Spoon a layer of Red Bean /seasoned meat mixture onto Doritos. Add cheese for the 3rd layer. Bake 5-7 minutes to melt cheese. Serve hot.
