Chef: Ron Dubs - Elkton Terminal Bean Plant - Elkton, MI 2 cups CO-OP ELEVATOR® dry Black Beans Soak beans over night, rinse and drain. Put beans in large pot and with enough fresh water to cover them. Bring to boil and continue to cook over medium heat for approximately 30 minutes or until soft. Drain beans. Smash beans with potato masher and add enough chicken stock to achieve desire consistency. Transfer beans into a bowl, add cream cheese and place in microwave over for one minute on 50% power just long enough to soften cream cheese. Add the taco seasoning and mix well. Spread onto serving platter and refrigerate until completely cooled. Add sour cream, salsa, lettuce, and cheese. Top with tomatoes and black olives, if desired.
