Cajun Red Beans and Rice

1 lb. CO-OP ELEVATOR® dry Small Red Kidney Beans
1 Tsp. extra virgin olive oil
1 red onion (small) chopped
1 ½ Tsp chopped garlic
1 chopped red bell pepper
1 ½ tsp. red pepper
½ tsp. Cajun seasoning
2 ham hocks
½ cup medium salsa

Sort beans, removing any off color looking beans before soak process. Cover beans with 2 inches of cold water and soak overnight.

In the morning rinse and drain beans. Return the rinsed beans to the pot. Cover beans with 3 times their volume of water.

Heat oil in large pot over medium heat. Add onion and cook 5 minutes. Stir in garlic, red bell pepper, red pepper, and Cajun seasoning. Add boiled beans to mixture. Add 2 ham hocks. Simmer for 40 minutes. Add salsa. Drain off half the liquid. Mix remaining beans and liquid with cooked rice.

Serve over rice. Yields 10 servings.
