Black Bean Soup

Chef: Carol Henry - Bean Department - Pigeon, MI

1 lb. CO OP ELEVATOR® dry Black Beans (presoaked and drained)
5 cups water
Meaty ham bone
1 ½  cups celery, diced
2 cups onions diced
2 cans seasoned diced tomatoes
1 tsp. hot sauce

Add beans, and ham bone in large kettle. Simmer about 1 ½ hours. Add remaining ingredients and cook until tender
