Bean Cookies

2 cups CO-OP ELEVATOR® Small Red Kidney Beans
1 ¼ cups granulated sugar
2/3 cubs brown sugar
3 cups flour
½ tsp. baking powder
2 cups chopped nuts of your choice
2 tsp. molasses
1 tsp. vanilla
¾ cups chunky applesauce
½ cup vegetable oil
2 eggs
1/3 cup water

Soak beans overnight, drain and rinse Add enough fresh water to pot to cover beans. Simmer beans 2 hours until tender.

Mash Beans and add all wet ingredients and mix well. In separate bowl combine all dry ingredients and mix well.

Add together the mixes and blend together.

Pre-heat oven to 350 degrees. Spoon them on greased cookie sheet. Bake approx. 12 minutes

Makes about 3 dozen cookies
